Ingredients

  • 1 lb. box large shells
  • 3 lb. potatoes
  • 1 lb. Longhorn cheese
  • 1/4 lb. American cheese
  • 6 large onions
  • 3 sticks butter

Method

  • Peel potatoes; cube and cook.
  • Drain potatoes.
  • Cube cheese and add to potatoes.
  • Mix through.
  • Put lid on pan and let set for 10 minutes or until cheese melts.
  • Mash with hand masher.
  • Cook shells according to directions on box.
  • Drain.
  • Cool and stuff with potatoes and cheese mixture.
  • Saute sliced onions in butter. Layer shells in pan and top with butter and onions.
  • Slow heat to warm all ingredients.
