Ingredients

  • 1 (7 oz.) can green chile salsa (mild)
  • 4 corn tortillas
  • oil or lard
  • 4 eggs
  • 2 Tbsp. butter or oleo
  • 1 c. mild Cheddar cheese or Jack, grated

Method

  • Heat salsa in saucepan.
  • In
  • skillet quickly fry tortillas in oil until soft.
  • Remove
  • and
  • keep warm.
  • In skillet fry eggs in butter or oleo until white are set, but yolks are soft. Place tortillas on baking sheet and
  • set
  • one fried egg on each tortilla.
  • Spoon salsa over eggs
  • and
  • sprinkle
  • cheese on top. Slide baking sheet under broiler
  • to
  • melt cheese until bubbly. Serve immediately on warmed plates.
  • Serves 4.
