Ingredients
- 1 (7 oz.) can green chile salsa (mild)
- 4 corn tortillas
- oil or lard
- 4 eggs
- 2 Tbsp. butter or oleo
- 1 c. mild Cheddar cheese or Jack, grated
Method
- Heat salsa in saucepan.
- In
- skillet quickly fry tortillas in oil until soft.
- Remove
- and
- keep warm.
- In skillet fry eggs in butter or oleo until white are set, but yolks are soft. Place tortillas on baking sheet and
- set
- one fried egg on each tortilla.
- Spoon salsa over eggs
- and
- sprinkle
- cheese on top. Slide baking sheet under broiler
- to
- melt cheese until bubbly. Serve immediately on warmed plates.
- Serves 4.
