Ingredients

  • 1/2 c. margarine
  • 1 medium onion, minced
  • 1 clove garlic, minced
  • 3 c. coarse dry bread crumbs
  • 1/2 c. minced celery
  • 1/2 c. minced raw carrot
  • 1 Tbsp. minced parsley
  • 1 tsp. salt
  • 1/4 tsp. thyme
  • 1/2 tsp. sage
  • 1/2 tsp. pepper

Method

  • Spread on 1 1/2 pounds beef round steak.
  • (First, bone steak and pound flour into both sides; brush off excess flour.)
  • Roll up and tie securely.
  • Brown on all sides in a little hot fat in large heavy utensil.
  • Add 1/2 cup hot water.
  • Cover; cook 1 1/2 hours in 350° oven.
  • Uncover and cook 1/2 hour longer.
  • Add thickening to juices in utensil for gravy.
