Ingredients
- 4 green peppers
- 1 1/2 c. cooked rice
- 1/4 c. chopped onion
- 8 oz. pork sausage or ground beef
- 8 oz. shredded mild Cheddar cheese
- 1 medium tomato, chopped
Method
- Preheat oven to 375°.
- Remove tops, seeds and membranes from peppers.
- Brown meat in skillet; cook with onion.
- Drain excess fat.
- Stir in rice, tomato and 1 1/2 cups cheese.
- Fill peppers with meat mixture, topping with remaining cheese.
- Arrange in 9-inch square baking dish.
- Add 1/4 cup water to pan.
- Bake 30 minutes or until peppers are tender.
