Ingredients

  • 4 green peppers
  • 1 1/2 c. cooked rice
  • 1/4 c. chopped onion
  • 8 oz. pork sausage or ground beef
  • 8 oz. shredded mild Cheddar cheese
  • 1 medium tomato, chopped

Method

  • Preheat oven to 375°.
  • Remove tops, seeds and membranes from peppers.
  • Brown meat in skillet; cook with onion.
  • Drain excess fat.
  • Stir in rice, tomato and 1 1/2 cups cheese.
  • Fill peppers with meat mixture, topping with remaining cheese.
  • Arrange in 9-inch square baking dish.
  • Add 1/4 cup water to pan.
  • Bake 30 minutes or until peppers are tender.
