Ingredients
- 1/2-1pound striped bass/sea bass
- flour
- white or red cooking wine
- lemon
- butter
- olive oil
Method
- Remove skin
- Cut fish in to strips
- Dust with flour on both sides
- In a large frying pan add 1 tablespoon butter and add oil.
- Add fish.
- When the fish is golden on both sides add a heavy splash of wine.
- Cook for 1 more minute remove and squeeze lemon on top
