Ingredients
- 3-4 Roma tomatoes
- 1/2 an onion
- 2-3 garlic cloves
- 1 pkg. small Mexican pasta
- EVOO
- water
- S&P
- 1 lb chicken breast
- cilantro
Method
- Brown pasta in oil
- Blend tomatoes,onion & garlic
- Add to pasta, cook for 5 minutes
- Add water, chicken, cilantro and S&P
- Cook till chicken is tender
- Remove chicken, let cool and shred with fork
- Add chicken back to soup and serve
