Ingredients

  • 2 whole Eggs
  • 1 cup Cooked Rice
  • 2 slices Deli Ham
  • Parsley, To Taste

Method

  • 1. Lightly beat 2 eggs. Gently mix in 1 cup of cooked rice (leftover rice works great, can be white or brown).
  • 2. Tear ham slices into small pieces and heat in a frying pan over medium-high heat until they begin to brown. Pour in the eggs/rice mixture and scramble until the egg is cooked through.
  • 3. Turn out onto a serving dish. Sprinkle with salt, pepper and parsley (or other herbs/spices) to taste.
  • This recipe can easily be adapted to use other meats, such as bacon or sausage. Also try omitting meat and adding cooked veggies for a nice vegetarian meal.
