- 1 c. miniature marshmallows
- 2 c. thawed strawberries
- 1 (3 oz.) pkg. strawberry Jell-O
- 2 1/4 c. flour
- 1 1/2 c. sugar
- 1/2 c. shortening (or margarine)
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 c. milk
- 1 tsp. vanilla
- 3 eggs
Method
- Grease large pan (15 x 10 x 1-inch) well; sprinkle all marshmallows in pan.
- Prepare strawberries by combining with the strawberry Jell-O; let stand.
- Cream shortening and sugar; add eggs and beat well.
- Add sifted dry ingredients alternately with milk.
- Add vanilla; blend well.
- Pour batter over marshmallows. Spoon strawberry mixture over the batter.
- Bake at 350° for 45 to 50 minutes.
