Ingredients

  • 3 Tbsp. butter or margarine
  • 2 medium onions, sliced
  • 1 1/2 lb. potatoes, peeled and sliced thinly
  • 2 c. chicken broth
  • 1 1/2 tsp. salt
  • dash of pepper
  • 1 c. light cream
  • 2 c. heavy cream
  • chopped chives for topping

Method

  • Melt butter in heavy soup kettle.
  • Saute onions until golden and soft.
  • Add potatoes, chicken broth, salt and pepper; simmer on low heat until potatoes are very soft, even mushy.
  • Blend or puree mixture in a food processor or press through a sieve with a wooden spoon.
  • Return to kettle.
