Ingredients
- 3 Tbsp. butter or margarine
- 2 medium onions, sliced
- 1 1/2 lb. potatoes, peeled and sliced thinly
- 2 c. chicken broth
- 1 1/2 tsp. salt
- dash of pepper
- 1 c. light cream
- 2 c. heavy cream
- chopped chives for topping
Method
- Melt butter in heavy soup kettle.
- Saute onions until golden and soft.
- Add potatoes, chicken broth, salt and pepper; simmer on low heat until potatoes are very soft, even mushy.
- Blend or puree mixture in a food processor or press through a sieve with a wooden spoon.
- Return to kettle.
