Ingredients

  • 1 baked (9-inch) pie shell
  • 1 c. sugar
  • 3 Tbsp. cornstarch
  • 1 Tbsp. butter (optional)
  • 1 qt. fresh strawberries (you can use frozen)
  • 1/2 c. water

Method

  • Mash enough berries to make 1 cup pulp.
  • Combine sugar and cornstarch.
  • Mix well.
  • Add water.
  • Stir and add pulp.
  • Cook, stirring constantly, until thick and translucent, about 10 minutes. Stir in butter and cool.
  • Place remaining uncooked berries in bottom of cooled pie shell.
  • Cover with cooked mixture. Refrigerate at least 2 hours and serve with whipped cream.
  • (If you use frozen berries, thaw and drain, then use juice instead of water.)
