Ingredients
- 1 baked (9-inch) pie shell
- 1 c. sugar
- 3 Tbsp. cornstarch
- 1 Tbsp. butter (optional)
- 1 qt. fresh strawberries (you can use frozen)
- 1/2 c. water
Method
- Mash enough berries to make 1 cup pulp.
- Combine sugar and cornstarch.
- Mix well.
- Add water.
- Stir and add pulp.
- Cook, stirring constantly, until thick and translucent, about 10 minutes. Stir in butter and cool.
- Place remaining uncooked berries in bottom of cooled pie shell.
- Cover with cooked mixture. Refrigerate at least 2 hours and serve with whipped cream.
- (If you use frozen berries, thaw and drain, then use juice instead of water.)
