Ingredients

  • 3 Tbsp. butter
  • 1/2 c. green pepper, chopped
  • 1 tsp. salt
  • dash of cayenne pepper
  • 1 c. Cheddar cheese, grated
  • 1 (1 lb. 13 oz.) can hominy, drained
  • 1/2 c. buttered bread crumbs
  • 1/4 c. mild canned green chili peppers (optional)
  • 1 small onion, minced
  • 3 Tbsp. flour
  • 1/2 tsp. dry mustard
  • 1 1/2 c. milk
  • 1/2 c. ripe olives, chopped

Method

  • Melt butter in saucepan; add onion and green pepper and saute for 5 minutes.
  • Blend in flour and seasonings.
  • Add milk and cook, stirring, until mixture thickens and comes to a boil.
  • Add grated cheese and stir until melted.
  • Remove from heat; add olives and hominy.
  • Pour into a 1 1/2-quart casserole dish; sprinkle with buttered bread crumbs and bake at 375° for 30 minutes or until crumbs are brown.
  • Serves 4 to 6.
