Ingredients

  • 2 1/2 c. boiling water
  • 3 sm pkg. strawberry jello
  • 2 3/4 c. cold water
  • 15 oz. mandarin oranges, drained and divided
  • 4 oz. cream cheese, softened
  • 2 Tbsp. sugar
  • 1 (8 oz.) carton cool whip, divided

Method

  • In medium bowl stir boiling water and jello together for at least 2 minutes. Stir in cold water. Refrigerate about 1 1/4 hours or until slightly thickened. Reserve a few oranges for garnish if desired. Gently stir in remaining oranges into thickened gelatin. In a separate bowl beat cream cheese and sugar with a wire whisk until well blended. Gently stir in 2 c. whipped topping. Spoon into large serving bowl, cover with gelatin mixture. Refrigerate 2 hours or until firm. Garnish with remaining whipped topping and reserved oranges.
