Ingredients

  • 1 lb. vanilla wafers, crushed
  • 4 eggs
  • 1 box powdered sugar
  • 1 c. pecans, chopped
  • 2 sticks butter
  • 2 c. whipped cream
  • 2 (10 oz.) pkg. frozen strawberries, thawed

Method

  • Place 2/3 of the box of crushed wafers in large baking dish. Cook eggs, butter and powdered sugar to thick cream consistency. Cook to 200° in double boiler.
  • Pour over wafers and cool.
  • Spread 1 cup whipped cream over mixture; next, spread 1/2 cup pecans. Next add both packages of strawberries, next 1 cup of whipped cream.
  • Top with remaining wafers and pecans.
  • Freezes beautifully.
