Ingredients

  • 1 c. all-purpose flour
  • 1/2 c. finely chopped pecans
  • 10 oz. pkg. frozen strawberries, thawed or 1 1/2 c. sliced fresh strawberries
  • 2 egg whites
  • 1/3 c. brown sugar
  • 1/2 c. melted margarine
  • 1 c. sugar
  • 2 tsp. lemon juice
  • 1/2 pt. whipping cream, whipped

Method

  • Combine flour, brown sugar, pecans and margarine.
  • Bake at 350° for 20 minutes in a 9-inch square pan, stirring often.
  • Let cool.
  • Combine strawberries, sugar, lemon juice and egg whites. Beat at high speed on mixer for about 20 minutes or until light and fluffy.
  • Fold whipped cream into strawberries.
  • Remove 1/3 of crumbs from pan.
  • Pat remaining crumbs into smooth layer.
  • Pour strawberry mixture over crumbs in pan and sprinkle reserved crumbs over top.
  • Freeze.
  • Yield: 8 to 10 servings.
