Ingredients
- 1 c. all-purpose flour
- 1/2 c. finely chopped pecans
- 10 oz. pkg. frozen strawberries, thawed or 1 1/2 c. sliced fresh strawberries
- 2 egg whites
- 1/3 c. brown sugar
- 1/2 c. melted margarine
- 1 c. sugar
- 2 tsp. lemon juice
- 1/2 pt. whipping cream, whipped
Method
- Combine flour, brown sugar, pecans and margarine.
- Bake at 350° for 20 minutes in a 9-inch square pan, stirring often.
- Let cool.
- Combine strawberries, sugar, lemon juice and egg whites. Beat at high speed on mixer for about 20 minutes or until light and fluffy.
- Fold whipped cream into strawberries.
- Remove 1/3 of crumbs from pan.
- Pat remaining crumbs into smooth layer.
- Pour strawberry mixture over crumbs in pan and sprinkle reserved crumbs over top.
- Freeze.
- Yield: 8 to 10 servings.
