Ingredients

  • 1 Large Egg
  • 1/2 cups Milk
  • 1/4 cups Water
  • 1 Tablespoon Butter, Melted
  • 1/2 Tablespoons Vanilla Extract
  • 1/2 cups All-purpose Flour
  • 3/4 Tablespoons Sugar
  • 1/8 teaspoons Salt
  • 1/2 cups Red Pepper Jelly
  • 6 Strawberries
  • 2-1/2 ounces, weight Goat Cheese
  • Fresh Basil, To Taste

Method

  • Mix eggs, milk, water, butter, and vanilla extract together. Add flour, sugar, and salt.
  • Preheat a small nonstick skillet to medium heat. Add 1/3 crepe batter mix to heated skillet. As quickly as possible, rotate skillet to thin out crepe and make it larger in size. Each crepe should be cooked about 1 minute per side. Repeat until there is no batter left over.
  • Spread red pepper jelly on crepe and top with strawberries, goat cheese, and basil to taste. Fold in half or quarters, depending on your preference.
