Ingredients
- 1 Large Egg
- 1/2 cups Milk
- 1/4 cups Water
- 1 Tablespoon Butter, Melted
- 1/2 Tablespoons Vanilla Extract
- 1/2 cups All-purpose Flour
- 3/4 Tablespoons Sugar
- 1/8 teaspoons Salt
- 1/2 cups Red Pepper Jelly
- 6 Strawberries
- 2-1/2 ounces, weight Goat Cheese
- Fresh Basil, To Taste
Method
- Mix eggs, milk, water, butter, and vanilla extract together. Add flour, sugar, and salt.
- Preheat a small nonstick skillet to medium heat. Add 1/3 crepe batter mix to heated skillet. As quickly as possible, rotate skillet to thin out crepe and make it larger in size. Each crepe should be cooked about 1 minute per side. Repeat until there is no batter left over.
- Spread red pepper jelly on crepe and top with strawberries, goat cheese, and basil to taste. Fold in half or quarters, depending on your preference.
