Ingredients
- 1 tablespoon sesame oil
- 2.5 cm (1 inch) piece of galangal, peeled and thinly sliced
- 2 garliccloves, chopped
- 2 red chillies, thinly sliced
- 200 g (7 oz) button mushrooms, halved
- 100 g (3 1/2 oz) oyster mushrooms, halved
- 1 tablespoon soy sauce
- 2 handfuls of basil, chopped
Method
1. Heat a wok until hot. Add the sesame oil and swirl to coat the side. Add the galangal, garlic and chilli and stir-fry over medium-high heat for 2 minutes.
2. Add the button mushrooms and stir-fry for a further 2 minutes, then add the oyster mushrooms and stir-fry for 30 seconds, tossing constantly until the mushrooms start to soften. Add the soy sauce and basil, toss well and serve.
