Ingredients

  • 75 grams butter softened
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • caramels cut into small pieces

Method

  • Preheat the oven to 180 Celsius.
  • Cream the butter and sugar together. Add the egg and vanilla and mix well.
  • Sift the flour, baking powder, and salt. Add to the butter mixture and mix slightly to combine.
  • Cover the dough with plastic wrap and refrigerate for 1 hour.
  • Roll out the dough and cut into desired shapes. Cut smaller shapes out of the middles also. If hanging the cookies, use a needle to poke a hole in the top edge of each cookie.
  • Place onto a cookie sheet and place a few pieces of cut caramels into the smaller shapes.
  • Bake for approximately 10 minutes until lightly browned on both sides. If hanging, let cool first.
