Ingredients

  • 1 pkg. dried apricots
  • peach or apricot brandy
  • 1 stick butter
  • 8 oz. cream cheese
  • 1/2 c. chopped walnuts
  • 1 (14 oz.) Brie round

Method

  • Chop apricots and soak overnight in brandy.
  • Blend butter and cream cheese in mixer.
  • Fold in apricots and walnuts.
  • Cut Brie hamburger-style.
  • Remove rind off top and sides; leave on bottom. Spread mixture on bottom half and place top of Brie on filling. Coat top and sides with remaining mixture.
  • Garnish with 2 apricot halves and 2 walnut halves.
  • This will keep a long time in the refrigerator.
