Ingredients
- 2 lb. ground beef
- 1 (16 oz.) can pinto beans
- 1 can red kidney beans
- 1 can tomatoes, chopped
- 1 (15 oz.) can tomato sauce
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 2 pkg. Mexican cornbread mix
Method
- In a large skillet, saute onions and peppers in a small amount of oil.
- Add ground beef and brown.
- Drain fat, and then add tomatoes, tomato sauce and beans.
- Mix well.
- Pour into a large casserole dish.
- Mix the cornbread mix according to directions on package and pour over bean mixture.
- Bake in a 425° oven (preheated) until golden brown and bubbly, approximately 30 to 40 minutes.
