Ingredients

  • 2 lb. ground beef
  • 1 (16 oz.) can pinto beans
  • 1 can red kidney beans
  • 1 can tomatoes, chopped
  • 1 (15 oz.) can tomato sauce
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 2 pkg. Mexican cornbread mix

Method

  • In a large skillet, saute onions and peppers in a small amount of oil.
  • Add ground beef and brown.
  • Drain fat, and then add tomatoes, tomato sauce and beans.
  • Mix well.
  • Pour into a large casserole dish.
  • Mix the cornbread mix according to directions on package and pour over bean mixture.
  • Bake in a 425° oven (preheated) until golden brown and bubbly, approximately 30 to 40 minutes.
