Ingredients
- 2 butternut squash (1-inch chunks)
- 1/3 c. Parmesan cheese
- 1 large garlic clove
- 1/4 to 1/3 c. olive oil
Method
- Shake squash chunks in a bag of flour; shake off excess flour. Put into oiled or buttered shallow baking dish.
- Scatter with cheese, minced garlic and pepper to taste.
- Drizzle with olive oil.
- Put into a preheated 400° oven.
- Bake 30 to 40 minutes. Serve hot.
