Ingredients
- 10 c. squash
- 4 c. onions
- 1 c. bell peppers
- 5 Tbsp. salt
- 2 1/2 c. white vinegar
- 4 c. sugar
- 1 Tbsp. black pepper
- 1 Tbsp. celery seed
- 1 Tbsp. turmeric
- 1 (4 oz.) jar pimentos
Method
- Coarsely grind squash, onions and bell peppers; add salt.
- Let set overnight.
- Next morning, drain.
- Wash in cold water, using a fine wire colander.
- Squeeze out excess liquid.
- Mix together the rest of the ingredients; bring to boil.
- Add relish mixture; let return to boil and boil about 2 minutes.
- Put in jars and seal.
