Ingredients

  • 10 c. squash
  • 4 c. onions
  • 1 c. bell peppers
  • 5 Tbsp. salt
  • 2 1/2 c. white vinegar
  • 4 c. sugar
  • 1 Tbsp. black pepper
  • 1 Tbsp. celery seed
  • 1 Tbsp. turmeric
  • 1 (4 oz.) jar pimentos

Method

  • Coarsely grind squash, onions and bell peppers; add salt.
  • Let set overnight.
  • Next morning, drain.
  • Wash in cold water, using a fine wire colander.
  • Squeeze out excess liquid.
  • Mix together the rest of the ingredients; bring to boil.
  • Add relish mixture; let return to boil and boil about 2 minutes.
  • Put in jars and seal.
