- 12 c. ground squash
- 4 chopped green pepper
- 4 c. ground onion
- 2 large jar pimentos
- 5 Tbsp. pickling salt
- 2 c. white vinegar
- 6 c. sugar
- 1 Tbsp. turmeric
- 2 Tbsp. pickling spice (tie in a rag)
Method
- Mix squash, green peppers, onion, pimentos and pickling salt and let sit overnight, then drain and rinse in cold water.
- Bring 2nd part to a boil and add the 1st part.
- Boil 30 minutes.
- Stir often.
- Place into jars and seal.
