Ingredients
- 2 medium zucchini or 4 to 5 yellow squash
- 1 grated carrot
- 1 Tbsp. chopped onion
- 1/4 c. flour
- 1 egg, beaten
- salt and pepper to taste
- oil (to fry in)
Method
- Mix squash and salt.
- Let drain 15 minutes, then squeeze out excess liquid.
- Mix all other ingredients and squash together. Drop by spoonfuls into hot oil and fry until brown.
- Drain on paper towels. These are good.
