Ingredients

  • 1 can cream of chicken soup
  • 1/2 c. sour cream
  • 1 1/4 c. stuffing mix
  • 3 c. cooked squash, drained
  • 3/4 c. grated carrots
  • 1/2 c. chopped onion
  • 1 stick butter

Method

  • Saute carrots and onion in 4 tablespoons butter.
  • In a bowl, mix together soup, sour cream, squash, 3/4 cup of stuffing mix and the carrots and onion together.
  • Pour into a casserole dish.
  • Mix remaining butter and stuffing together and sprinkle over top of casserole.
  • Bake at 350° for 30 to 40 minutes.
