Ingredients
- 1 can cream of chicken soup
- 1/2 c. sour cream
- 1 1/4 c. stuffing mix
- 3 c. cooked squash, drained
- 3/4 c. grated carrots
- 1/2 c. chopped onion
- 1 stick butter
Method
- Saute carrots and onion in 4 tablespoons butter.
- In a bowl, mix together soup, sour cream, squash, 3/4 cup of stuffing mix and the carrots and onion together.
- Pour into a casserole dish.
- Mix remaining butter and stuffing together and sprinkle over top of casserole.
- Bake at 350° for 30 to 40 minutes.
