Ingredients
- 2 lb. fresh or frozen yellow squash
- 1 small onion, chopped fine
- 1/2 pt. sour cream
- 18 saltine crackers
- 1 c. grated Cheddar cheese
- 1/2 stick margarine
- salt
- pepper
Method
- Boil squash; salt and pepper to taste.
- Drain and mash squash; add onion, margarine, 12 saltine crackers (crumbled), 1/2 of the cheese and sour cream.
- Pour into casserole dish.
- Crumble remaining saltines and sprinkle on top.
- Cover with the remaining cheese and bake at 350° for 40 to 50 minutes.
