Ingredients
- 1/2 c. Hellmann's mayonnaise
- 1 Tbsp. instant onion
- 1/4 tsp. salt
- 1/3 c. Italian bread crumbs
- 1/3 c. Parmesan cheese
- 1 eggplant, cut in 1/2-inch slices (don't peel)
Method
- In small bowl, stir together first 3 ingredients.
- Combine bread crumbs and Parmesan cheese. Brush both sides of eggplant with mayonnaise mixture.
- Coat with crumbs.
- Place on cookie sheet and bake in a 350° oven until golden brown.
