Ingredients
- 2 c. flour
- 4 tsp. baking powder
- 1/2 tsp. salt
- 6 packets Sweet 'N Low
- 1 egg, beaten
- 1 c. skim milk or low-fat
- 1/2 c. margarine
- 1 c. unsweetened blueberries
Method
- Preheat oven to 425°.
- Grease 12 muffin pan cups with nonstick cooking spray.
- In large bowl, sift flour, baking powder, salt and sweetener.
- In small bowl, beat egg, milk and margarine with fork or whisk.
- Add egg mixture and blueberries to flour mixture.
- Stir just until flour is moistened.
- Spoon batter in cups.
- Bake 15 to 20 minutes or until toothpick is clean.
- One muffin = 1/2 bread and 1/2 fat.
- Calories - 117; 2 gm fat.
