Ingredients

  • 2 c. flour
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 6 packets Sweet 'N Low
  • 1 egg, beaten
  • 1 c. skim milk or low-fat
  • 1/2 c. margarine
  • 1 c. unsweetened blueberries

Method

  • Preheat oven to 425°.
  • Grease 12 muffin pan cups with nonstick cooking spray.
  • In large bowl, sift flour, baking powder, salt and sweetener.
  • In small bowl, beat egg, milk and margarine with fork or whisk.
  • Add egg mixture and blueberries to flour mixture.
  • Stir just until flour is moistened.
  • Spoon batter in cups.
  • Bake 15 to 20 minutes or until toothpick is clean.
  • One muffin = 1/2 bread and 1/2 fat.
  • Calories - 117; 2 gm fat.
