Ingredients
- 5 or 6 small or medium squash
- 2 (8 oz.) pkg. mild Cheddar cheese
- 2 eggs
- 1 or 2 small onions (optional)
- 2 packs Ritz crackers
- 2 c. milk
- 1/2 stick margarine
Method
- Cook squash and onions on top of stove until tender.
- In a mixing bowl, stir milk, margarine and eggs until well mixed.
- In a large casserole dish, put one layer of drained squash and onions on bottom.
- Shake one pack of crackers on top of squash; shake 1 pack of cheese on top of crackers.
- Then pour half of liquid mixture on top of cheese.
- Repeat one more layer the same way.
- Cook in oven for 30 minutes or until brown.
- Serves 8 or 9.
