Ingredients

  • 5 or 6 small or medium squash
  • 2 (8 oz.) pkg. mild Cheddar cheese
  • 2 eggs
  • 1 or 2 small onions (optional)
  • 2 packs Ritz crackers
  • 2 c. milk
  • 1/2 stick margarine

Method

  • Cook squash and onions on top of stove until tender.
  • In a mixing bowl, stir milk, margarine and eggs until well mixed.
  • In a large casserole dish, put one layer of drained squash and onions on bottom.
  • Shake one pack of crackers on top of squash; shake 1 pack of cheese on top of crackers.
  • Then pour half of liquid mixture on top of cheese.
  • Repeat one more layer the same way.
  • Cook in oven for 30 minutes or until brown.
  • Serves 8 or 9.
