Ingredients

  • 3 ounces ground pork
  • 2 ounces chopped onions
  • 6 ounces ,a big handful of spinach, chopped a little if necessary to fit into the pan
  • 1 large fresh duck egg beat with 1 teaspoon of water
  • 1/8 cup parmesan
  • pinch of salt and black pepper

Method

  • Saute pork in an iron skillet and add the onion. Saute until browned.
  • Add the spinach and using tongs keep folding into the hot ingredients until completely wilted.
  • Beat the egg with a little water and pinch of salt.
  • Add to the spinach mixture and gently mix and smooth out the egg and spinach to incorporate all ingredients evenly.
  • Sprinkle the parmesan over the top. Turn off the burner and leave for a few minutes to slightly melt.
  • Grind black pepper and a little sea salt. Enjoy the whole pan or share. A big hunk of freshly baked sour dough bread is great.
