Ingredients
- 1 lb. yellow squash
- 1 1/2 c. grated cheese
- 1/4 stick butter
- 1 egg
- 1/4 c. milk
- 1 medium size onion
- 8 Ritz crackers
- 1 can cream of mushroom soup
Method
- Boil squash and onion in salted water until tender; drain.
- Add grated cheese and butter.
- Add beaten egg and milk.
- Add crushed crackers.
- Pour in 8 x 8-inch pan.
- Top with grated Cheddar cheese and crushed Ritz crackers.
- Bake at 350° until brown.
