Ingredients
- 1 1/2 lb. small new potatoes
- 1/3 c. chopped cucumber
- 1 1/2 Tbsp. chopped green onion
- 2 Tbsp. chopped green pepper
- 2 Tbsp. sliced radishes
- 1 tsp. salt
- dash of pepper
- 1/2 c. dairy sour cream
Method
- Wash and scrape potatoes; cook until tender in boiling salted water.
- Drain.
- Combine remaining ingredients.
- Heat, but do not boil.
- Pour sour cream mixture over hot potatoes.
- If desired, garnish with parsley.
- Serve immediately.
- Makes 4 servings.
