- 10 ounces Baby Spinach
- 1/2 cup pecans, chopped & toasted
- 1/2 cup craisins
- feta cheese, crumbled
- Dressing
- 3/4 cup extra virgin olive oil
- 3 tablespoons sugar
- 3 tablespoons balsamic vinegar
- 1 tablespoon sour cream
- 1/2 teaspoon Dijon mustard
Method
- Toast pecans in oven at 350 for 5-10 minutes.
- Mix Dressing.
- Put Spinach in a bowl, add pecans, craisins and feta cheese. Toss, add dressing & toss again.
