Ingredients

  • 10 ounces chopped spinach, thawed & drained
  • 1 12 teaspoons garlic, minced
  • 12 teaspoon olive oil
  • 6 ounces 2% shredded Italian cheese blend
  • 12 cup light mayonnaise
  • 13 cup light sour cream
  • 2 -3 ounces milk
  • lemon juice, dash
  • 12 teaspoon onion powder
  • 1 tablespoon crushed red pepper flakes

Method

  • In med.
  • saucepan over low heat, add olive oil and minced garlic; saute 1 minute.
  • Add milk and cheese, stir constantly until melted & well blended.
  • Remove from heat; stir in mayo & sour cream.
  • Fold in spinach.
  • Return to low heat, add lemon juice & spices.
  • Stir to blend well.
  • Transfer to an ovenproof dish sprayed with nonstick spray.
  • Top with more shredded cheese if desired.
  • Bake at 325 for 15-20 minutes or until bubbly.
