Ingredients
- 3 to 4 bananas, mashed
- 1/3 c. sugar
- 1/4 c. safflower oil
- 1/2 tsp. vanilla extract
- 1 1/4 c. brown rice flour
- 1 tsp. baking soda
- 1 tsp. xanthan gum
Method
- In large bowl, mix bananas, sugar and oil together well. Add vanilla, brown rice flour, baking soda and xanthan gum; mix well. Pour into regular size or mini muffin pans and bake at 325° for 25 minutes.
