Ingredients
- 1 (6 oz.) pkg. corn muffin mix
- 2 eggs, beaten
- 1 (8 oz.) carton sour cream
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
- 1/2 c. butter, melted
- 1/2 c. Cheddar cheese, shredded
Method
- Combine all ingredients, except cheese; stir well until blended.
- Spoon mixture into greased 12 x 8 x 2-inch baking dish. Bake at 350° for 25 minutes, top with cheese and bake 5 minutes more.
