Ingredients

  • 4 Tbsp. butter
  • 1 c. flour
  • 1 tsp. baking powder
  • 1 small onion, chopped
  • 6 strips crisp bacon, crumbled
  • 1 lb. shredded Cheddar cheese
  • 1 c. fried onion rings, crushed
  • 3 eggs, lightly beaten
  • 1 c. milk
  • 1 (10 oz.) pkg. chopped spinach, thawed
  • 1/2 c. chopped mushrooms

Method

  • Drain spinach.
  • In large bowl, mix together the eggs, flour, milk and baking powder until smooth.
  • Stir in spinach, onion, bacon, cheese and mushrooms.
  • Melt butter into a baking dish. Pour mixture into dish.
  • Sprinkle with crushed fried onion rings. Bake at 350° for 30 to 35 minutes or until golden brown.
  • Cool slightly and cut into small squares.
  • Makes about 40 bars. Reheats well.
