Ingredients
- 2 pkg. frozen chopped spinach
- 2 c. Pepperidge Farm herb stuffing cubes
- 1 c. Parmesan cheese
- 6 eggs, well beaten
- 3/4 c. melted butter
- salt and pepper to taste
Method
- Defrost spinach and squeeze out liquid.
- Blot on paper towel (do this early).
- Combine all ingredients in a mixing bowl.
- Roll into bite sized balls.
- Bake at 350° for 10 to 15 minutes.
- Serve hot.
- Makes about 80 spinach balls.
- All or any part may be frozen.
