Ingredients
- 8 slices bacon, cut into 1/2-inch pieces
- 4 c. torn spinach leaves
- 2 hard-cooked eggs, cut into pieces
- 2 medium, red, tart cooking apples, cored and sliced 1/2 inch
- 2 oz. Colby cheese, cut into very thin slices
- 1/4 c. mayonnaise
- 2 Tbsp. orange juice
Method
- In a 10-inch skillet, cook bacon over medium-high heat, stirring occasionally until browned.
- Drain off fat.
