Ingredients
- 6 large eggs
- 1 pinch ground nutmeg
- 2 cups milk
- 10 ounces frozen spinach, thawed and squeezed dry
- 14 teaspoon dried thyme
- 14 teaspoon salt
- 4 ounces monterey jack cheese, shredded
- 14 teaspoon ground black pepper
- 8 slices white bread, cut into 3/4 inch pieces
Method
- Preheat oven to 375 degrees F. In large bowl, with wire whisk, beat eggs, milk, thyme, salt, pepper, and nutmeg until blended with rubber spatula.
- Stir in spinach, cheese, and bread.
- Pour mixture into 13" by 9" baking dish.
- Bake bread pudding until browned and puffed and knife inserted in center comes out clean, 20-25 minute.
- Remove breading pudding from oven, let stand 5 minute.
