Ingredients

  • 6 large eggs
  • 1 pinch ground nutmeg
  • 2 cups milk
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 14 teaspoon dried thyme
  • 14 teaspoon salt
  • 4 ounces monterey jack cheese, shredded
  • 14 teaspoon ground black pepper
  • 8 slices white bread, cut into 3/4 inch pieces

Method

  • Preheat oven to 375 degrees F. In large bowl, with wire whisk, beat eggs, milk, thyme, salt, pepper, and nutmeg until blended with rubber spatula.
  • Stir in spinach, cheese, and bread.
  • Pour mixture into 13" by 9" baking dish.
  • Bake bread pudding until browned and puffed and knife inserted in center comes out clean, 20-25 minute.
  • Remove breading pudding from oven, let stand 5 minute.
