Ingredients

  • 2 lb. hamburger
  • 1 med. onion, chopped
  • 1 can black beans, rinsed and drained
  • 1-2 TBSP. chili pwd.
  • 2-3 tsp. ground cumin
  • 1/2 tsp. salt
  • 4 flour tortillas
  • 1 can cream of mushroom soup
  • 1 can diced tomatoes
  • 1 sm. can green chilies, undrained
  • 1 c. cheddar cheese, shredded

Method

  • Cook the meat in skillet until it is no longer pink, drain. Add beans, chili pwd., cumin and salt.
  • Transfer to a 9 by 13 in. baking dish.
  • Arrange tortillas over the top; combine soup and tomatoes, then pour over the tortillas.
  • Sprinkle with cheese. Bake uncovered at 350° for 25-30 min. Yields 8 servings.
