- 2 lb. hamburger
- 1 med. onion, chopped
- 1 can black beans, rinsed and drained
- 1-2 TBSP. chili pwd.
- 2-3 tsp. ground cumin
- 1/2 tsp. salt
- 4 flour tortillas
- 1 can cream of mushroom soup
- 1 can diced tomatoes
- 1 sm. can green chilies, undrained
- 1 c. cheddar cheese, shredded
Method
- Cook the meat in skillet until it is no longer pink, drain. Add beans, chili pwd., cumin and salt.
- Transfer to a 9 by 13 in. baking dish.
- Arrange tortillas over the top; combine soup and tomatoes, then pour over the tortillas.
- Sprinkle with cheese. Bake uncovered at 350° for 25-30 min. Yields 8 servings.
