Ingredients

  • 2 large eggs
  • 1/3 c. bread crumbs (equals 3 slices bread)
  • 10 oz. frozen chopped spinach, defrosted and liquid squeezed out
  • 16 oz. cottage cheese (2 c.)
  • 6 oz. grated Cheddar cheese (2 c.)
  • 1/2 tsp. black pepper
  • 1/2 c. chopped onion
  • 1/2 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/2 c. Parmesan cheese

Method

  • In large bowl, beat eggs; mix in bread crumbs.
  • Add remaining ingredients, leaving out Parmesan cheese.
  • Mix well.
  • Pour mixture into greased 13 x 9-inch pan.
  • Sprinkle top with Parmesan cheese. Bake at 350° for 45 minutes.
  • Let stand about 10 minutes before cutting.
