Ingredients

  • 1 1/2 lb. (675 g; 6 links) mild sausage, 1-inch (2,5 cm.) pieces
  • 10 small new red potatoes, quartered
  • 1/2 tsp. (2 ml.) pepper
  • 1/2 tsp. (2 ml.) thyme leaves
  • 1 c. (250 ml.) sliced 1/8-inch (0,2 cm.) red onion
  • 1/4 c. (50 ml.) chopped, fresh parsley
  • 1 green pepper, cut into 1-inch (2,5 cm.) pieces

Method

  • In 10-inch (25 cm.) skillet, combine sausage, potatoes, pepper and thyme.
  • Cook over medium heat, stirring occasionally, until potatoes are browned (10 to 12 minutes).
  • Reduce heat to medium-low.
  • Cover; cook until potatoes are tender (8 to 10 minutes).
  • Stir in remaining ingredients.
  • Continue cooking, uncovered, until vegetables are crispy tender (4 to 5 minutes).
