Ingredients
- 1 1/2 lb. (675 g; 6 links) mild sausage, 1-inch (2,5 cm.) pieces
- 10 small new red potatoes, quartered
- 1/2 tsp. (2 ml.) pepper
- 1/2 tsp. (2 ml.) thyme leaves
- 1 c. (250 ml.) sliced 1/8-inch (0,2 cm.) red onion
- 1/4 c. (50 ml.) chopped, fresh parsley
- 1 green pepper, cut into 1-inch (2,5 cm.) pieces
Method
- In 10-inch (25 cm.) skillet, combine sausage, potatoes, pepper and thyme.
- Cook over medium heat, stirring occasionally, until potatoes are browned (10 to 12 minutes).
- Reduce heat to medium-low.
- Cover; cook until potatoes are tender (8 to 10 minutes).
- Stir in remaining ingredients.
- Continue cooking, uncovered, until vegetables are crispy tender (4 to 5 minutes).
