Ingredients

  • 1 pound mahi mahi sliced into 1" pieces
  • 2 tablespoons olive oil
  • 1 lime large, juiced
  • 1/4 cup cilantro chopped
  • 1/4 teaspoon salt
  • 1 pinch cayenne pepper
  • 1 tablespoon chili powder
  • 1 bag green cabbage shredded
  • 1/4 cup cider vinegar
  • 2 tablespoons sugar
  • 2 tablespoons cilantro chopped
  • 1 teaspoon celery seed
  • 1 pinch red pepper
  • 1 pinch cayenne pepper
  • 1 tablespoon olive oil
  • 4 wheat tortillas large low fat
  • 1 cup cheese mexican light
  • 1 cup pico de gallo store purchased
  • 4 tablespoons light sour cream

Method

  • Combine olive oil, lime, chili powder, 1/4 cup cilantro, cayenne and salt in shallow dish. Coat Mahi Mahi with marinade and let sit for 15 minutes.
  • Slaw
  • Combine olive oil vinegar, sugar, cilantro, cayenne pepper and salt in a bowl. Toss with cabbage and let sit for 15 minutes.
  • Using a stove top grill pan, grill Mahi Mahi until done.
  • Warm tortillas and top with slaw, Mahi Mahi, pico de gallo and cheese.
