Ingredients

  • 1 1/2 tsp. salt
  • 1 1/2 tsp. dry mustard
  • 1 1/2 tsp. chili powder
  • 2 1/2 tsp. tarragon vinegar
  • 1 (5 1/2 to 6 lb.) turkey breast, skinned and deboned
  • 4 Tbsp. chopped onion
  • 3 Tbsp. vegetable oil
  • 1/2 c. water
  • 1/4 c. tarragon vinegar
  • 3 Tbsp. butter
  • 3 Tbsp. Worcestershire sauce
  • 1 Tbsp. plus 1 tsp. sugar
  • 2 tsp. salt
  • 2 tsp. dry mustard
  • 2 tsp. chili powder
  • 1 tsp. pepper
  • 3 cloves garlic, minced
  • 1/2 tsp. hot sauce
  • 1/8 tsp. sweet red pepper flakes

Method

  • Combine first 4 ingredients;
  • stir well.
  • Brush mixture evenly over
  • both sides of turkey breast; place
  • in
  • large shallow dish.
  • Cover and chill at least 1
  • hour.
  • Saute
  • onion in oil in a saucepan until tender.
  • Stir in water and remaining ingredients; simmer 20 minutes. Set aside.
