Ingredients

  • 1/4 cup Parmesan cheese
  • 1/2 teaspoon paprika
  • 1 egg beaten with 1/3 c. water
  • 2 tablespoons corn oil
  • 8 ounces tomato sauce or spaghetti sau
  • oregano to taste
  • 1 cup shredded mozzarella cheese
  • 3/4 cup Seasoned dry bread crumbs
  • 3 boneless chicken breasts skinned, split, and pounded thin, about 2 lbs.

Method

  • Dip chicken in bread crumbs, mixed with Parmesan cheese and paprika, then in egg and once more in bread crumbs mixture.
  • Coat bottom of oblong baking dish with 1 tablespoon oil.
  • Place chicken in dish and sprinkle with remaining oil.
  • Heat 2 to 2 1/2 minutes; turn chicken over and heat an additional 2 to 2 1/2 minutes.
  • Top with tomato sauce and season with oregano.
  • Heat 3 1/2 to 4 1/2 minutes or until sauce is hot.
  • Sprinkle with Mozzarella cheese.
