Ingredients

  • 6 None chicken tenders, sliced in half lengthwise
  • 12 None bamboo skewers, soaked in cold water
  • 2 tbsp sweet chili sauce
  • 1 None lemon, peel finely grated and lemon juiced
  • 1 tbsp grated fresh ginger
  • 2 tsp olive oil
  • 2 cloves garlic, crushed
  • 1/4 tsp ground coriander

Method

  • Thread chicken strips onto skewers.
  • Combine chili sauce, lemon peel and juice, ginger, oil, garlic and coriander in a shallow dish. Add chicken skewers. Turn to coat. Cover. Refrigerate for 20 mins to marinate.
  • Heat a grill pan on medium-high heat or preheat the grill to medium. Cook skewers for 3-4 mins each side until cooked through.
