Ingredients

  • 1 1/4 c. flour
  • 1 c. sugar
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 3/4 c. cooking oil
  • 2 eggs
  • 2 tsp. vanilla
  • 1 c. grated carrots
  • 1 c. chopped nuts
  • 1/2 c. raisins, if desired

Method

  • Lightly spoon flour into measuring cup; level off.
  • Measure ingredients in order listed into a large bowl, except carrots, nuts and raisins.
  • Blend 1 minute at low speed and 2 minutes at high speed.
  • Stir carrots, nuts and raisins into batter.
  • Pour into greased 9-inch cake pan.
  • Bake at 325° for 40 to 45 minutes, until toothpick inserted in center comes out clean.
  • Sprinkle with powdered sugar or top with whipped cream and drizzle of honey, if desired.
