Ingredients
- 1 1/4 c. flour
- 1 c. sugar
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 2 tsp. cinnamon
- 3/4 c. cooking oil
- 2 eggs
- 2 tsp. vanilla
- 1 c. grated carrots
- 1 c. chopped nuts
- 1/2 c. raisins, if desired
Method
- Lightly spoon flour into measuring cup; level off.
- Measure ingredients in order listed into a large bowl, except carrots, nuts and raisins.
- Blend 1 minute at low speed and 2 minutes at high speed.
- Stir carrots, nuts and raisins into batter.
- Pour into greased 9-inch cake pan.
- Bake at 325° for 40 to 45 minutes, until toothpick inserted in center comes out clean.
- Sprinkle with powdered sugar or top with whipped cream and drizzle of honey, if desired.
