Ingredients
- 1/3 c. olive oil
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. honey
- pinch of cayenne pepper
- 2 Tbsp. Cajun or Creole seasoning
- 2 Tbsp. fresh chopped parsley
- 1 Tbsp. soy sauce
- 1 1/2 lb. shrimp (uncooked), peeled and deveined
Method
- Combine all ingredients, except shrimp, in a 9 x 13-inch baking dish.
- Add shrimp; toss to coat.
- Refrigerate 1 hour. Preheat oven to 450°.
- Bake until shrimp are cooked through, stirring every 5 to 10 minutes.
- Takes 10 to 15 minutes.
- Done when shrimp are pink.
- Garnish with lemon wedges.
- Serve with rice.
- Serves 4.
