Ingredients

  • 1/3 c. olive oil
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. honey
  • pinch of cayenne pepper
  • 2 Tbsp. Cajun or Creole seasoning
  • 2 Tbsp. fresh chopped parsley
  • 1 Tbsp. soy sauce
  • 1 1/2 lb. shrimp (uncooked), peeled and deveined

Method

  • Combine all ingredients, except shrimp, in a 9 x 13-inch baking dish.
  • Add shrimp; toss to coat.
  • Refrigerate 1 hour. Preheat oven to 450°.
  • Bake until shrimp are cooked through, stirring every 5 to 10 minutes.
  • Takes 10 to 15 minutes.
  • Done when shrimp are pink.
  • Garnish with lemon wedges.
  • Serve with rice.
  • Serves 4.
