Ingredients

  • 1 1/2 lb. chicken breast halves
  • 1/3 c. fine dry bread crumbs
  • 2 Tbsp. snipped parsley
  • 3/4 tsp. dried Italian seasoning
  • 1/2 tsp. salt
  • 1/3 tsp. ground red pepper
  • 1/4 c. all-purpose flour (optional)
  • 3 Tbsp. skim milk
  • nonstick cooking spray

Method

  • In a mixing bowl, combine bread crumbs, parsley, Italian seasoning, salt and ground red pepper.
  • Put flour in a plastic bag. Place milk in a shallow bowl.
  • One at a time, put chicken pieces in the bag and shake to coat.
  • Dip in milk and then into crumb mixture, pressing lightly to coat well.
  • Place chicken pieces in a baking dish lined with nonstick spray.
  • Bake at 375° for 45 to 55 minutes or until chicken is no longer pink.
  • Serves 4.
