Ingredients

  • 2 whole Potatoes, Washed And Peeled (Russet Or White, 2 Should Be Approximately 15 Oz.)
  • 1 Tablespoon Canola Oil
  • 1/4 teaspoons Finely Chopped Fresh Ginger
  • 1/2 pieces Dried Chili Pepper
  • 1 Tablespoon Apple Cider Vinegar
  • 1/4 teaspoons Salt
  • 1/8 teaspoons Finely Chopped Green Onion For Garnishing

Method

  • 1. Use a knife or food processor to cut the potatoes into thin shreds (hash brown thickness).
  • 2. Place the shredded potatoes into a colander and thoroughly rinse with cold water to remove the extra potato starch. Then thoroughly drain the water.
  • 3. Heat oil in a frying pan over medium-high heat. Add ginger and chili pepper. Stir occasionally until fragrant.
  • 4. Add shredded potato. Stir constantly for one minute. Add vinegar and salt. Stir-fry for another minute or until the shredded potatoes are translucent. Remove from heat. Garnish with green onion on top. Serve hot or cold.
